First, let's talk about the Turkey Waldorf Salad on Monday. I have put this together from a couple of other recipes. I have given two low fat dressings which I like. You may have others. That is fine. Just keep the proportions about the same. Now about the turkey. I you don't happen to have left over turkey and do not want to buy the fairly pricey precooked turkey, there are a couple of alternatives. First, buy a turkey breast roast, cook it. Have turkey and dressing out of one half of it and use the other half next day for this recipe. Second, use something other than turkey. The most obvious replacement would be left over rotisserie chicken. Any flavor. Or shrimp. Or ham. See how versatile this recipe is!! Now about Meat Salad (or mystery meat). This is pure nostalgia for me. About a hundred years ago, I was a student at Central High School in Knoxville. A nice lady named Mrs. Hunter ran the cafeteria. One thing was always on the menu. Meat Salad sandwiches. Do I need to tell you that high school boys would declare this to be mystery meat? I do have a confession to make about meat salad. I liked it. I still do. And when a friend from Central told me she had the recipe, I jumped at it. However, there is a very valid reason to use it again on Tuesday. On that day, the efforts of a group of dedicated grads of Central will dedicate a new historical plaque on the campus (yes it has a real campus). A plaque is appropriate. For more than a hundred years, there has been a school on this site. Which school has changed from time to time. In fact, Central High Scool is now about a mile away and this is Gresham Middle School. It is named in honor of the long time principal of the school, Miss Hassie K. Gresham. A great effort has been underway for a while now to restore that campus to its former glory and is having great success. This dedication is part of that effort. I will go out and cheer these good folks on and then come to the studio and tell you how to make Meat Salad for yourself. But please don't tell anyone that I admitted that I like it.
