(WVLT) - More and more East Tennesseans are finding out they have Celiac disease, an auto-immune disorder that forces them to cut glutens out of their diet.

East Tennessee This Morning's Stacy McCloud showed us in a special two-part series what the disease is all about and exactly what people with the disorder have to stay away from.

People with Celiac Disease have to change their diet, but as long as they follow the rules, they can still enjoy some great foods.

Wendy McFadden and Reggie Mackay with Earth Fare joined us for Wellness Wednesday, to show us how Gluten-free cooking could still be delicious.

Here is the recipe they cooked:

Devil's Food Cake with Whipped Cream Frosting and Strawberries.
3/4 c. boiling water
1 c. cocoa powder
3/4 c. buttermilk
1 c. Featherlight Mix (1 part rice flour, 1 part tapioca flour, 1 part cornstarch, 1 tsp per cup potato flour)
plus 3/4 c. teff flour or 1 3/4 c. Four Flour Mix
1 scant tsp xanthan gum
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 tsp egg replacer
1 1/2 c. brown sugar
1/2 c. mayonnaise
1 egg plus 1 egg white
1 tsp vanilla
3-4 drops red food coloring (optional)

Preheat oven to 350. Grease a 9"x13" oblong cake pan and dust with rice flour.

Into the boiling water, whisk the cocoa powder. Let cool slightly before adding the buttermilk.

In a medium bowl, whisk together the flour mix, xanthan gum, baking powder, baking soda, salt and Egg replacer. Set aside.

In the bowl of your mixer, beat the brown sugar, mayonnaise, eggs and vanilla until light. Add the food coloring (if used). Beat the cocoa mixture. Add the dry ingredients and beat only until well blended. (The batter may seem thin).

Pour the batter into the prepared pan and bake for 25-30 minutes or until a tester comes out clean. Cool before frosting. Both chocolate and buttercream go well with the rich taste. Makes 15-18 servings.

Whipped Cream Frosting
1 packet unflavored gelatin
1/4 c. cold water
2 or 3 c. whipping cream
Sugar to taste

Dissolve the packet of gelatin in the cold water in a small glass or metal bowl. When dissolved, place the bowl in warm water to soften the gelatin until it will pour into the cream. Place the gelatin and cream in the mixer and whip to firm peaks. Add sugar. Frost your cake and keep refrigerated until serving. Makes approx. 1 qt frosting.
